Demonstrate the different types of grape and wine to serve and sell.

The profession

The sommelier advises customers on their choice of wines, provides service in optimal tasting conditions and draws up the wine and beverage list in accordance with wine and alcohol legislation. This program takes up part of our “food and wine pairing” program and complements it with more technical aspects linked to the sommelier’s profession.

Contents

module 1 . SUPPLYING, STORAGE AND MAINTENANCE

  • Select and purchase wines (contact with suppliers, management of sales agents, choice of wines)
  • Reception and storage.
  • Cellar organization and storage according to wine origin, age, packaging and preservation method
  • Cellar and materials management.

module 2 . develop your knowledge of wine

  • The main wine families and different vinifications: white – red – rosé and sparkling wines.
  • AOCs, wine classification, notions about different grape varieties.
  • Wine aromas and their impact on pairing.
  • Wine vocabulary.
  • The main foreign wines

module 3. practicing Wine service

  • Present the wine list and advise customers on their choice of wines to match their dishes.
  • Prepare the selected wine (temperature control, decanting, etc.).
  • Choice of lenses.
  • In what order should the wines be served?
  • At what temperature should the wines be served?
  • How to decant?
  • How to open a bottle depending on the wine.
  • Serving wine at table.
  • The English language of wine and pairing.

module 4. apply food and wine pairing

  • Basic rules to ensure the right fit.
  • The 3 fundamental chords.

Target audience and prerequisites

Hotel, restaurant and events personnel.

At least one year’s experience in the hospitality industry + CV (interview if required)

Certification validation

  • Assessment of skills by MCQ
  • How to obtain the “Butler Academy” internal certificate: 70% of answers must be correct to validate the certificate.
  • At the end of the training, a certificate will be given to the beneficiaries specifying the nature, skills acquired and duration of the training.
