module 1 . prepare the set-up, protocol and organization of the service

  • Define service procedures and coordinate organization
  • Register reservations and update room and table occupancy plans
  • Ensure smooth running of the service
  • After the service, the room is tidied up and prepared for the next service.

module 2 . welcoming and serving customers

  • Greet customers, seat them at a table and present the menu
  • Advise customers on their choice of dishes according to their tastes and the day’s suggestions, and take orders
  • Advise customers on a choice of wines to match their dishes
  • Carry out finishing operations on dishes by cutting up meat and fish, flambéing…
  • Serving food and wine
  • Adapting to a multicultural clientele
