module 1 . produce a menu that reflects the image of your establishment
- Principles and rules of card composition
- Guiding customers’ choice – creating desire.
- Composition of the offer – Daily or market menus – formulas – menus – different menus.
- Material design: graphic charter, format, colors, map reading direction, photos.
- Various menus, wine lists, bar menus, etc., and indoor and outdoor promotional materials.
- Regulations in force, mandatory displays

- Price creation and sales analysis :
- Pricing: 3 basic rules
- Omnès principles
- Identify the most profitable products and optimize sales
